Wise Words: Eat Your Vegetables!

A recent study published by the U.S. Centers for Disease Control and Prevention reports that only 9% of adults eat enough vegetables and only 12% eat the recommended amount of fruit daily. Adults should consume 2 to 3 cups of vegetables and 1 ½ to 2 cups of fruit day. While we encourage healthy eating, it’s often not possible to consume enough food to get the needed amounts of beneficial substances such as indole-3 carbinol, which is found in cruciferous vegetables and promotes healthy estrogen metabolism. For example, to get the recommended daily dose of indole-3 carbinol, one would have to consume about two pounds of broccoli, so in this case, we would getting this nutrient by taking a supplement.
